Oatmeal Cookie Pancakes
My mom has been making these delicious oatmeal cookie pancakes for so many years now! They are a delicious breakfast enjoyed by all!

These yummy oatmeal cookie pancakes are perfect to make in advance so they are a quick and easy breakfast during the week!
There is nothing like making homemade pancakes. They fill the house with a yummy smell that sets the tone for a good day ahead, I think!
We love these oatmeal cookie pancakes in our house and they can be made in a variety of ways!
INGREDIENTS:
1 cup of oats
1 cup of wheat flour (or all purpose flour)
1/2 cup brown sugar
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 cup of chopped walnuts or granola (optional)
3/4 cup sour cream
3/4 cup milk
2 large eggs
1 tsp vanilla
3/4 cup raisins/blueberries/raspberries (whichever you prefer)
1/4 cup melted butter
OPTIONAL ADD INS:
1/4 cup melted peanut butter
1/4 cupe chocolate chips
1 mashed banana
DIRECTIONS:
Combine all dry ingredients in a medium bowl including walnuts or granola
In another bowl, combine sour cream, milk, eggs, and vanilla
Whisk wet ingredients into the dry ingredients
Fold in the raisins/blueberries/raspberries and any of the optional add ins
Stir in the melted butter
Scoop 1/4 cup of batter onto a hot griddle or pan
Flip when small bubbles appear
Cook until golden on each side
ENJOY—serve with syrup, honey, or just plain!
NOTES:
Makes 12 pancakes.
I usually double or triple the recipe and freeze the extras. They are delicious to pop in the toaster for a quick snack or breakfast.
The batter will be a thicker consistency
