Black Bean and Quinoa Salad

Black bean and quinoa salad is a go to recipe for us in the summer!

This black bean and quinoa salad can be enjoyed as a meal or as a simple side dish!

My mom made a similar salad to this one, years ago and we have loved it ever since! We have tweaked it a bit to our liking and now we make it all the time!

Using simple and fresh ingredients, this salad can be a side dish or as a main meal. You can also change up the ingredients to fit the needs of your family.

We love that it makes a ton of leftovers and honestly, we think it gets better as it sits and ‘marinates’ for a day in the refrigerator!

It’s great as a summer salad, but delicious in the winter time as well! It’s so versatile and easy to put together!

QUINOA SALAD INGREDIENTS:

  • 1 cup of your favorite quinoa

  • 1 small red onion, diced

  • 1/2 english cucumber, peeled and diced

  • 1/2 cup of cherry tomatoes, diced

  • 1 can of black beans, drained and rinsed

  • Optional: your favorite cheese—we like feta or goat cheese

DRESSING INGREDIENTS:

  • 1 Lime, zested and juiced

  • 1/2 cup of olive oil

  • salt and pepper to taste

QUINOA SALAD DIRECTIONS:

  1. Cook the quinoa following the instructions on your package

  2. While the quinoa is cooking, dice all ingredients, rinse the black beans and place in a large bowl

  3. Zest the lime and squeeze the juice into a small bowl, whisk in the olive oil and season with salt and pepper

  4. After quinoa is done, allow to cool for a bit so that it doesn’t wilt any of the veggies

  5. Combine the quinoa with the diced veggies and black beans

  6. Add the dressing and mix

  7. If adding cheese, gently fold it in

  8. ENJOY right away or store in the refrigerator for up to 3 days

This quinoa salad is a go to for us when we need a quick meal. We love it as leftovers for lunches throughout the week too. We will add grilled chicken to it if we want it to be more of a complete meal.
